I thought my technical dish was the weaker one, so I\u2019m still in shock, but it\u2019s such a proud moment.\u201d<\/p>\n<h3 class=\"p1\">Flavour, Simplicity and a Jamaican Summer Vibe<\/h3>\n<p class=\"p1\">Her winning creation, a\u00a0Caribbean-inspired jerk chicken taco\u00a0served with spicy pineapple salsa and a delicate micro herb salad, stood out for its balance of flavour, freshness, and authenticity. That experience, she says, was a turning point.<\/p>\n<p style=\"font-weight: 400;\">\u201cI\u2019ve never really had confidence in myself or in my cooking,\u201d she admitted. \u201cI used to watch\u00a0<em>MasterChef<\/em>\u00a0or other competitions and think, I could never do that. When my development chef put me forward for the OCS competition, I went in thinking I didn\u2019t stand a chance, but then I won. That changed everything. It gave me proof that I actually can do this.\u201d<\/p>\n<p style=\"font-weight: 400;\">That newfound self-belief clearly paid off. Her calm approach, careful preparation, and ability to trust her instincts are now hallmarks of her cooking style. Having originally trained as a\u00a0pastry chef, Shannon brings patience and precision to everything she makes. \u201cPastry teaches you to slow down and pay attention to detail,\u201d she said. \u201cEven when I\u2019m cooking savoury dishes, I can\u2019t rush. Their employers put them both forward separately, without the organisers realising they were a couple.<\/p>\n<p style=\"font-weight: 400;\">\u201cI got the email first to say they&#8217;d chosen me as one of the 16 finalists,\u201d Shannon laughed. \u201cI hadn\u2019t heard anything from him yet, and I didn\u2019t want to rub it in if he hadn\u2019t made it. Then he rang me and said, \u2018Oh, I got through too.\u2019 Since then, it\u2019s been a bit of a rivalry!\u201d<\/p>\n<p style=\"font-weight: 400;\">The friendly competition between them added another layer of excitement to an already electric event, but in the end, Shannon\u2019s dishes stole the show.<\/p>\n<h3 class=\"p1\">Cooking With Heart<\/h3>\n<p style=\"font-weight: 400;\">For Shannon, these awards show her growth, passion, and pride in representing OCS. \u201cI just love cooking for people,\u201d she said. \u201cSeeing them enjoy what you\u2019ve made, that\u2019s the best part. These competitions push you, but they also remind you why you started.\u201d Shannon often shares that her passion stems from her father\u2019s cooking; both her father and brother work in catering, so she\u2019s always been around passion in every dish. Shannon\u2019s second dish comes straight from her South African heritage: her take on \u2018bunny chow\u2019 incorporates her heritage into her dish, her key ingredient in everything she makes.<\/p>\n<h3 style=\"font-weight: 400;\">A Recipe for Success<\/h3>\n<p style=\"font-weight: 400;\">Her story is one of quiet confidence, hard work, and self-belief rediscovered.
